Lorann professional bakery emulsions are distinguished from concentrated extracts by a rich, robust and long-lasting taste. The emulsions are especially suitable for use in more extreme environments. Can be processed at high temperatures. An excellent choice for all cakes, biscuits, countertops, but also for fillings, such as glaze and desserts.
The emulsions are alternatives based on water, without alcohol, at extracts. Instead of using alcohol, the aroma is micro encapsulated in natural stabilizers and suspended in water. The encapsulation allows the aroma not to lose its integrity when exposed to high heat.
For baking use 1 teaspoon emulsion = 1 teaspoon extract
For products that do not require baking such as glaze or interiors, use less than in fallen thermal processing products.
